1.How do you "store" your coins without carrying them? If I have 3000gp, Hero Lab adds its entire weight to my encumbrance, under the assumption that I'm carrying all of it with me. How do I keep the money without carrying it with me?

2. How do I create custom monsters? Do I need the Bestiary package?
 
1. There are a few things you can do.

First, you can activate the "No Coin Encumbrance" houserule from the Configure Hero screen, if your group prefers to abstract or otherwise handwave away the issue of coin weight.

Alternately, you can move the money to "Dropped to ground", or create a custom container that itself has been dropped. For example, if you keep your money in a bank you might create a custom container called "Bank", and then move the money into that container (but make you you "drop" the bank or else HL will think you're actually carrying your bank around!). You move items between containers on the Gear tab, by clicking the bag icon.

Another option is to add "custom valuables" from the Gear tab, for when you've turned your wealth into more portable forms like gems. It's also the easiest way to split your coinage between various containers (like if you have some cash in the bank, some in your Bag of Holding, and the rest on your person).

2. You can create custom monsters using the editor which comes free with HL. That has a learning curve associated with it, but there are plenty of people here willing to help.

Okay, cool.

Next question: how do I split my money up between different containers? For example, 1000gp in a bank, 1000gp in saddlebags, and 50gp in my pockets? Thanks in advance.
 
That's what the custom valuables are for. As far as I know you can't add more than one instance of the "Money" item, so instead you create custom valuables with names like "Bank Account" or "Gold In Saddlebags". The thing to remember in this case is that HL can't auto-calculate the weight of custom valuables. That doesn't matter much in the case of the bank account, but for the saddlebags you may need to put in the weight by hand if you need to know whether your mount suffers encumbrance penalties.

That makes sense. Back to the custom monsters; I checked out the HL editor and think I would enjoy something a bit easier. Does the Bestiary package have something more straightforward for creating monsters?

The Advanced Race Guide? Has a monster builder in it, along with the ability to edit existing creatures from the bestiary.
 
Just to clarify, the ARG has a race builder mechanic, intended for building custom PC races by spending points within a budget.

For monster races, you're better off using the the Monster Building/Customization process which is included with the Bestiary. That isn't limited by points and has more options than the ARG system.

Do I just build the monster as an NPC? Also, I created a new weapon in the editor but it doesn't show up in the options for adding another weapon. How do I bring it in?
 
To use the custom monster stuff, on the Background tab select "Bestiary Monster Creation" as your race and go from there. It's only available if you have enabled the bestiary 1 source.

Did you give your weapon a source, and have you turned that source on? Alternately, have you integrated it by either hitting the Test Now button for it in the editor or else reloaded the game system?
