First off I am in edit mode.You can remove protection by clicking the Individual Options button (hammer and wrench icon) next to the name of the Category in the Navigation Pane (on the left) or at the top of the Content Pane (in the middle) or pressing F7 with the category selected. There you'll find an option to Remove Protection. After that you can select the Snippet and edit its properties.
What you're trying to do is rename the Class Snippet in an Individual. Because it's one of the Snippets from the Category definition, you'd have to go into the Category definition and rename it there. Alternatively, you can hide it and create a new Snippet definition, which is less likely to cause problems later. A third option (if you don't need to do it for every Individual) is to delete the Class Snippet it from this specific Individual and add a new Tags Snippet named Profession.

As you've seen, making changes to the Category definition doesn't affect any Topics/Articles using that Category that you've already created. You can update them manually by clicking the Options icon for the Topic/Article (or pressing F7) and selecting Quick Edit Content/Synchronize the Structure to Match the Category Definition.
When you add a new Snippet to a Category, there's an "Auto Add" checkbox in the Snippet definition. That's what makes it show up when you make a new Topic/Article using that Category.
You can't make anything Global. Global only has meaning to Categories and Tag Domains, and it means that the Category/Tag Domain is one of the ones included with all Realms by Realm Works.
