Looking for how to do two things

1. Is there any way to just edit the gp count? A few times I bought for free and forgot to uncheck the button for it, it would be easier for me to just edit with the total cost down then do the "dirty" methods I have used so far: Using the journal to put a negative amount, and purchase something for the amount Im looking to remove and sell it for nothing.

2. Is there a way to add notes to items in the inventory? my char found 4 vials with a cloudy liquid in them, but I fear I will forget whats in them without a note.

You need to add an line to your journal to add or remove coin. Alternately you could sell back the item you bought for whatever you paid for it (by hitting the "X") and then buy it again for the correct amount.

As far as the notes go... I usually add a custom item for things that are not ID'd yet.
