M&M 3rd ed. How to do Custom Output

I don't get custom output. I got to the File and Save Custom Output and I get a webpage with XML. I do not know how to 'program' XML. I have no idea what to do with this information.

Explain this to me step by step, and if possible please use screen shot examples of a custom output. Anyone do any custom output can show me what you did.
