I must be dense (at least, that's what my wife says). But I can't figure out how to modify the character sheet. As in, change the font size of some items (too big!) remove some parts of it that I feel don't belong on a sheet (Cortex only, that's all I use it for).

Can anyone point me in the right direction?

Modifying character sheets is not currently available (it is on the to-do list). What do you want to change? User suggestions/requests are always appreciated.
