Basically we are house-ruling a +1 Natural Armor bonus to shields - Is there any way to do this?

I was trying to create a copy of the existing shields in the editor, but can't work out what I need to change to add the +1 NA adjustment.

You could create copies of the shield in the editor, add the +1, and have them all added that way. You could also just add a +1 AC in the Adjustments tab.

Also, does it need to ne Natural Armor? Or could it be just normal AC?

Take a look at the Amulet of Natural Armor to see how to add that type of armor.
