If you “can be” holy or unholy according to your deity’s sanctification entry, you make that choice, and if you “must be” holy or unholy, you gain the trait automatically. If the deity lists “none,” you can choose only options that don’t require the holy or unholy trait.
However, if your Class or Dedication feats don't care about Sanctification, then you won't be Sanctified even if your Diety requires it. So it does matter what you've picked. (I think that's what Mathias was trying to say.)That's not accurate—it's not set by the champion class. It's set by the deity's requirements. If you "can be" but aren't required to be by the deity's sanctification entry then you choose whether or not to be sanctified.
On the Champion page, if you have a choice there should be a "Diety" box at the top of the Class Features list. In its settings (via the gear icon or "Edit and Configure" on its full description) you can set Holy, Unholy, or clear it for None. (Available options will depend on the Diety, of course.)When setting sanctification options for a custom deity, however, if I don't select "sanctification required" and just provide the option to be holy, I can't find anywhere to elect to be sanctified.
