Removing and rebuilding animal companions

I play a high lever Ranger with the Boon Companion feat and I just lost my animal companion and I'm going to replace it with an entirely new one.

However, when I delete the current one and click "add animal companion", I just get the old one back. I know I can edit the old one but I want to go completely from scratch without having to check if I forgot to change anything. How can I do this?

If there is no way, then please, HL developers, add the possibility next update.
