When making a new monster from a similar one I try to copy from the existing list however some of these are not able to be copied. Why is that?
 
All of the material from add-on packages can be copied, but it cannot then be saved. This is an unfortunate necessity for content from add-on packages. You can still create a copy of a thing from an add-on package, but it will entail a little bit more work. First, create the copy of the thing for viewing/reference. Second, create a new "blank" thing of the same type. You can then reconstruct the new thing from scratch, referring to the copy as a guide for what content to add.
