As Mathias said, the Help menu is the first place for you to start. Though it does not go into the limbless portion you are asking about. There is a field on the race tab for "Number of Hands" that I think you can do this with. I know that I have added hands, but never removed all of them.

Of course if they have Natural Attacks, and not manufactured attacks, you don't have to do anything with this field. It just depends what you are trying to do with the race.
 
I would recommend reading the "Glossary" of terms to get up to speed on what the help and forums is talking about.

Then the FAQ#2 has all the links to the different places to find help on the editor including a four part video.
