I would like to request a function (and find out if it's currently possible)

If I want to select the cards shown, currently, I have to select certain
criteria which will determine which cards are included in what is visible.
I would like to select a single critera to EXCLUDE certain cards from being
visible.

This has been present since V1.0. :-)

Bring up the filter form. Select the group for which you want to exclude
certain tags. Above the tags in the right column, click on the triangle
button (just like an info window button). A menu appears from which you can
specify to exclude select tags. Then pick the tags that you want to exclude
and click OK.

You can combine excluded tags for one tag group and included tags for other
groups if you wish. More details will be found in the manual and via the
Help button at the bottom of the filter form.
