I am making a custom Category. Is there a way to make a default font size so anything I enter into the custom category will (by default) be the font/size I am looking for.
 
Not on a per-category basis. If you want a template for some or all instances of a category, create a Topic/Article that uses the Category, set it up the way you want, and duplicate it when you want a new one.

You can change some of the styling in preferences, but that applies to everything.
