Is there any way to add a animal companion to a character whose class does not normally allow for a animal companion? An adjustment or something similar?
 
ShadowChemoth's Adjustments in the Community Pack has an "Animal Companion, Allowed Class" Adjustment under Other Adjustments that should do what you want.

EDIT: Or not - I misread the description in the Adjustment, sorry.

Unfortunately in this case the adjustment won't work. :( It lets a class that normally gets an AC to be allowed to take a unique animal outside the normal limit. It sounds like for this case the Archetype approach is the best way to make a class get an AC when it normally does not get one (ie Fighter).
 
Take a look at the feat Animal Ally from Faiths & Philosophies - that grants the character an animal companion (behind the scenes, it bootstraps a configurable, which is where the companion is added).
