Let me start by saying I don't play Pathfinder.

But I do organize for it (among other RPGs) for a convention.

In the past, we pretty much did LFR and Shadowrun Missions.
for LFR we had character builder, but that's gone as we don't have internet access to allow players to manage characters.

Shadowrun missions will depend on Lone Wolf getting Shadowrun done before the convention.

However, Pathfinder seems to have a full set of data files I could purchase for the convention. With that in mind, which data modules should I buy for the convention that are applicable to Pathfinder Society adventures?

Thats a tough call. It would depend on what source materials you wanted to use. I would say just to buy them all but your cost would be around $100.00.

Are using all sources at the convention or just a smaller subset?

I wouldn't know... I can likely afford all the data packs, but I'm more interested as to if all of them are legal/necessary for PFS.

If the data in some packs is rarely used or just not legal for Pathfinder Society Organized Play, I don't need to buy it. Personally I'm not going to likely ever play Pathfinder. Doesn't mean that those who come to my convention don't or won't...

The easy answer is to go Pathfinder Society Resources. This webpage explains what is legal for play and what is not. My suggestion would be to get the Core and APG and the one bundle that contains Seeker of Secrets as this is a requirement for DMing PFS modules. The rest would be nice to have, but is not necessary.

Seeker of Secrets is necessary to use HL to DM? We don't plan to use it as a DMing tool. We plan to put up 3 computers with a shared network printer and the bundles of campaign data for 4e D&D, PFS, and Shadowrun... if it works out well, we might pick up Call of Cthulhu for the next year but it's not 100% as our CoC games are more prepared and individualized for each year's Anime Central.

Sorry, that is not what I meant. Seeker of Secrets is required to DM for Pathfinder Society Organized Play. So, since you already have to have it, may as well grab the bundle with it. It contains all of the equipment, Prestige Classes, Feats and Magic that is in the book and is the only place I know of that has the Wayfinder equipment which many Pathfinders probably would want to grab.

The standard wayfinder is now marked as coming from the Inner Sea World Guide (in addition to Seekers of Secrets), so every user has it, whether they have Seekers of Secrets or not.
