Is there a guide on creating a dataset for a roster? Or converting one, perhaps? I'm looking a the Blood Bowl rules for this at the moment an was hoping for a pointer or two

Check out the "Army Builder Authoring Kit" documentation and the ABCreator tool. You'll find a link to these within the Start menu, next to the shortcut for launching Army Builder itself.
