Templates?

I did a (very) quick search and cannot seem to find what I'm looking for, but can someone please tell me how to do something like add a Skeletal Champion or Zombie template onto a monster?

Thanks!

Should look like classes, so go to the class selection (Level up) tab and click level up, then select the template.
