Normally, you can use the Bonus field, but when I try with any tool (not just thieves') or make a copy of the tool with a bonus it just defaults to the proficiency or double proficiency.
From a deeper dive I can see that it creates the name dynamically with a Lone Wolf (LW) side script that generates the tool name, it might be worth opening a ticket with LW asking if the Bonus field on tools is not working?
