Is there a way to create more size categories?

You could use the editor and create a new size category. make it a template and copy one of the other size categories to use as a guide.

I tried that, but I can't find where the sizes are stored.

I'm not sure what chiefweasel was talking about. The answer is no. Those values are hard-coded in HL.

The more I think about it, I think chiefweasel was talking about a "virtual" size increase. make a template that gave the appropriate bonuses, while the actual size was still Colossal. It could work.

yes, just make a template that adds the bonuses that you need.

What I was doing is making a Vehicle Construction set for Hero Lab using Pathfinder. Created a Vehicle "Race" as the base. Templates for Airships, Land, and Water craft. Also templates for the primary construction materials. Only stats they have are Str & Dex. Str takes the place of Con. Dex takes the place of Man Class.
