I use paper and retype them. I find typing while DMing distracting, at least during live games at the table. Maybe byt VTT it wouldn't matter.
If I were to take my notes at the table, I would use Google Documents, so that every character is saved as I type it without having to keep clicking save or sync. Still, maybe I'm just old, but I've got enough windows and tabs to deal with when using a computer to help run a game. Also, I can easily write on a pad of paper while looking at something else or while in a conversation with someone. Much harder for me to that with typing.
