Missing Templates?

Okay I must be thick.

I just bought about $100 in Pathfinder data packages, including all 3 Bestiaries, the Advanced and Ultimate books.

I'm trying to make a couple of NPCs for my game, including a Vampire and a Graveknight. Only neither is coming up on the Races menu. I can find Vampire Spawn and that's it.

I must be doing something very wrong, but I have no idea what. I just need to add a template over my race choice, but I don't see how to do that. What am I missing?

Templates can be selected from the Classes menu, you should find what you need there
