EDIT: SOLVED!

When I create a "detailed monster or npc using gamemastery guide", and go to customise ancestry, I'm unable to select a level higher than 3.

How would I go about creating a level 4, 5, 6... NPC using that option?

I just tried it and it works for me. Maybe double-check your Settings?

Thanks for trying this out for me!

With a basic monster I am able to set it to a higher level, but with a detailed monster I am not. I tried again, but I must be looking at the wrong spot.

Can you confirm that you tried it with a detailed monster?

Found it! The GMG was not enabled by default, making the maximum level 3.
