Is there any way to differentiate in Hero Lab between, for example, cold iron AND magic damage reduction and cold iron OR magic damage reduction? Creatures in the encounter builder with multiple DR types all seem to look the same, whether that DR is AND or OR.

Yes. With the Encounter Builder (and in a portfolio), if the info doesn't specify 'OR' you should consider multiple DR to be 'AND'. For example: compare Kyton (DR 5/good or silver) and Rakshasa (DR 15/good and piercing).

"And" DRs are listed seperately, "or" DRs are linked together conjoined by an "or".

Kyton:
DR 5/good or silver

Rakshasa:
DR 15/good, 15/piercing
