I've gone and created (using Background > Race > Bestiary Monster Creation) several monsters as encounters specific to an adventure path, and then saved them with other encounters for that adventure.

How easy/hard would it be to add them to Hero Lab, so they're available as a selection by clicking Race... rather than having to dig them out of whatever adventure the Saved Portfolio is in?

What is the process for that?

You can create monster races in the editor (they have a tab of their own), although how hard that is varies with the specifics of the monster. Generally monsters with complex, build as you go options are more difficult (Unfettered Eidolon) than ones with fixed stats (Horse, Heavy).

You could also save a portfolio containing your preconfigured monster as a file name ending with ".stock" instead of ".por", and then put the ".stock" file into the pathfinder data directory - it will then be available from the "encounter builder".
