When I have 3 Swiftclaw bikes and add Power Fist (which you can have one biker replace his CCW with) it is supposed to cost 25pts but it adds 50pts. Am i missing something or doing it incorrectly?

When you add a fist it adds a new biker with the fist - 25pts for the biker, 25pts for the fist. You will then have 4 bikers - click on the line with 3 bikers and press the large - button towards the upper right of the roster view to reduce the bike count to 2, giving a total of 3 bikes.
