I was looking at Eureka, and I noticed it's all GM Directions, and that makes it a bit harsh to read through. It would be nice to be able to change those colors to make it less eye-straining.

If I go to preferences, and look at the styles, I don't see an entry there for GM directions. Assuming I'm not just missing it, would it be possible to add GM Directions to the Styles section in Preferences?

Can't say that I find it harsh or difficult to ready, but I'm all for customization. So...

Under normal circumstances, with small snippets, no. But when everything is a GM note, and there are long snippets, those are not optimal colors.

I wonder if that was just accidentally missed or if there is some reason for that option to not be there? Manage Preferences allows Read Aloud, Message, Flavour, and Callout to have their font and background colours changed or reset to the default. I would think that it would be easy to do the same for GM directions.

+1 (but I would also but a note in Requested Features)
