I want to create an Ork list that includes a Deffkopta Choppa Skwadron but I don't see it as an option. I don't see Warhammer 40K Apocalypse as an army I can pick from on the update list.

Its there, you just gotta know where to look for the optional rule sets (ie Apocalypse, Imperial Armour, etc.)
When starting a NEW army list you will need to go to 'Choose Rules' Section(yellow), and select Apocalypse(green). To find it once you are creating your army, you will need to go to the Formations Tab. Here As you can see with my examples the Deffkopta Skwadron exists in the files.
