Are there tags for creature types or sub-types? I can't seem to find any, though I do see a special for some non-humanoids strictly for determining if they are affected by spells that affect only humanoids. I have a pre-requisite on Improved Turn Resistance that requires the Undead type, but can't seem to find how (or if) there is such a designated tag or field for the type of the creature.

There is a custom data file that contains monster types and subtypes.
They are all designated as specials though so you would have to bootstrap them onto the creatures first before you could check for the tag.

It's the MM - Creatures types compiled file.
