Okay, so I finally figured this out myself! It only took uh, six months :P
Created a source for the items I wanted to hide, then added each of the rolls I wanted to hide to the 'preclude' list. When the source is selected, the rolls don't render.

This has two sources, one which hides all regular rolls, except perception. The other hides all combat rolls, but that messes up the calculations for the combat tab, weapon pulls, etc. It's just nice for an uncluttered sheet where you can just show the contract rolls you want.
