Yes. Paizo has 52 scheduled PF2 events* in the Pathfinder Society room; the first events start when the con opens at 8 AM on Thursday, 2 hours before the Dealer's Room opens for you to pick up a book**. Those players and GMs will be pretty busy trying out the system while they adventure. :)

You don't need to be familiar with the rules in order to play most convention RPG events; usually characters are provided and rules are taught where needed. Part of why I go to cons is to try things I either haven't tried before or don't get to play at home for whatever reason.

PFS and other organized play events let you bring your own character who grows over time like in a home campaign. Folks who are already familiar with (A)D&D/Pathfinder systems will probably not have much trouble picking up enough Pathfinder 2nd on Thursday to make a Level 1 character for playing PFS events, and being able to use Hero Lab would make it even easier. You don't have to make a character, though; the PFS folks will have pregens available.

* Roughly 2,900 players and 17,500 player-hours, not counting the GMs.

** However, Paizo may have a separate booth open near the PFS room for people to pick up books early.
